Pina Colada

INGREDIENTS

8 cl. Happy Day pineapple juice
4 cl. white rum
3 cl. coconut syrup

The Great First Act

INGREDIENTS

8 cl. Happy Day orange juice
2 cl. Rauch lemon juice
3 cl. Marille Freihof (apricot drink)
2 cl. apricot brandy

PREPARATION
Otto Retzger was the drama director responsible for this drink. Lake Wörther, Carinthia, Austria has become his stage, on which many small and big “actors” make their appearances. One of them is this cocktail.

Gin Fizz

INGREDIENTS

cl. Rauch lemon juice
4 cl. gin
2 bar spoons pure sugar
Soda water

PREPARATION
The gin fizz is really nothing more than a sour made into a long drink with soda water. It is considered one of the most successful drinks in the history of barkeeping; Up until the sixties and seventies it was the biggest hit. It did go somewhat out of fashion during the “sweet wave” however, when bars were flooded with Caribbean drinks such as the pina colada. A closely related version is the Tom Collins, in which the ingredients are stirred in a glass instead of being shaken. Shaking nonetheless results in a better mixing of the drink, which makes the fizz unequaled.

Margarita

INGREDIENTS

2 cl. Rauch lemon juice
4 cl. tequila
2 cl. cointreau
Salt edged glass

PREPARATION
Tequila, the Mexican national drink, is traditionally drunk with salt and lemon. This “short” version is not always considered especially noble, however. Can you imagine the members of high society such as those in La Opera/ Mexico City gulping down Tequila as was done back the times of Pancho Villa? However, nobody wanted to do without tequila, and that is why this refined version arose. Originally the “younger brother” of the daiquiri, it soon turned into a real bar classic thanks to American tourists. A bar without frozen margaritas (with or without salty edges) is nowadays simply unimaginable.

Haze & Pearls

Rainer Husar says the following about this cocktail: “Haze & pearls – a prickling combination which promises the highest degree of enjoyment. I have been friends with Franz Rauch for a long time now. Even at the time when I first got to know him in Zürs he was only satisfied with the very best. That attitude has had a major influence upon his entire line of products. That is why I got the idea of mixing noble champagne with his fruit essences.”
